Whole 30: Day 4

Today was a leftover day.

Breakfast was the same: hard boiled eggs, pear, jerky.

Lunch was leftover kerala beef and cauliflower rice. It was still delicious. I ate lunch with co-workers who all had bites and were WOWED, especially with the cauliflower rice!! I am also wowed by it. So good. So simple. How have I never tried it before?!?

Dinner was a combo of leftovers from the last few days. The lesson: always make extra. Leftovers are important.

We DID have a mango for dessert. Sort of illegal but who cares. I don’t have a picture. It went too fast.

That’s it! Every day can’t be all that exciting.
